Old Amsterdam is only made from the weekday milk of Holstein Friesian cows (weekend milk is not deemed fresh enough for the 5 master cheesemakers). It is ripened to perfection and checked regularly for flavour. As it ages it develops a caramel sweetness and sometimes has a slight crunchiness.
